Sichuan pepper is a spice popular especially in China and is an interesting alternative to black pepper. It comes from a tree called yellow pepper and is most commonly found in the Sichuan province, where its Czech name Sichuan pepper comes from. We also encounter the names fagara, Chinese or Japanese pepper.
It is a significantly aromatic and strongly flavorful spice that will make any prepared dish special. The advantage is the strong pepper flavor without the burning sharpness. Interestingly, in China it is also used in roasted form as a spice for green tea.
Use:
We use Sichuan pepper wherever conventional pepper is used. Especially in dishes where the burning flavor already prevails, but you still miss the taste of pepper. If you are making a dish in a pan, it is advisable to fry some of the pepper and add some to the finished dish - this develops the whole range of flavors. It can be used in crushed or whole form. It is especially excellent on poultry prepared in the Chinese way. We recommend it for people who are sensitive to the pungency of regular pepper.
