Black pepper is a winding, evergreen vine growing up to 4 m long. The plant comes from the Indian subcontinent from the Malabar Coast. Black pepper has been spread to many tropical countries, today the largest growers include Vietnam, India, Indonesia and Sri Lanka. Its leaves are alternate, glabrous, ovate to elliptical, growing up to 10 cm long and 5 cm wide. The raceme inflorescence is made up of small flowers. The fruit is a 4 mm berry, containing a single seed - a grain. The harvested part is the fruit, which is known according to the processing method as black, white or green pepper.
Salvia Paradise® brings you whole white pepper, which is obtained from ripe berries by soaking in water to release the red skin. White pepper is sharper and more pronounced in taste and aroma than conventional pepper. White pepper is distinguished from black and green pepper mainly by the fact that it is peeled, which results in the loss of the sweet aroma and an emphasis on the peppery taste.
Usage:
We recommend grinding white pepper before use, as the grains are hard. It has its place in light sauces - e.g. cheese and cream sauces, where black pepper would spoil the visual appearance of the dish.
Storage: Keep dry and close tightly.
