Kuzu
The choice of binder gives dishes a creamy consistency and a silvery sheen. The vegetable binder is ideal for thickening soups, sauces and desserts. Kuzu is obtained from the roots of a climbing plant that grows wild only in Japan, reaching a length of up to 2 meters and weighing up to 100 kg. As early as the 12th century, farmers around Kyoto developed a method of extracting starch from the fibers of the kuzu root. In Asia, Kuzu has always had a firm place in fine cuisine. Kuzu starch is washed out of the chopped roots, filtered again and again and finally air-dried.
Ingredients: Kuzu starch* (Pueraria lobata)
*from organic controlled farming
Usage: For 1/2 l of liquid, mix 2 teaspoons of Kuzu in a little cold water, add to the liquid, bring to the boil and cook briefly, stirring constantly.
