This gluten-free and phosphate-free baking powder contains cream of tartar (the crystals of which can be found in wine barrels), regular baking soda and organic cornstarch. We use it in the same way as regular baking powder, and it is also popular in the preparation of gluten-free pastries. For 500 g of loose ingredients, we use 3 teaspoons (17 g) of powder. Baking powder made from baking soda and cream of tartar tends to start to leaven the dough (break down) at room temperature. We therefore recommend putting the dough in the oven and baking as soon as possible after incorporating the baking powder. This mainly applies to thinner batters.
