Green tea China fine loose
We have been looking for an affordable, light organic green tea in China for a long time. The Li Yu Shan farm from the Da Zhang Shan project was ready to try it with us. From our experience in South Korea and Vietnam, we designed a method that should bring the desired result. To our delight, it turned out exactly what we were looking for. A very light tea with a very fresh aroma that is not bitter.
The result depends a lot on the temperature at which the fresh leaves are sterilized. You can sterilize with steam like the Japanese or with hot drums like the Chinese. Chinese classics like Zhen Mei (Chun Mee) or Zhou Cha (gunpowder) go through heated drums in which the enzymes are deactivated. Otherwise, if the leaf cells of the leaves were to break during rolling, these enzymes would ferment the escaping leaf juice and black tea would be produced. Traditional Chinese varieties work with relatively low temperatures. These teas tend to have an amber-colored infusion and a bitter tinge. In China, they love bitter flavors, in the West they don't. Higher temperatures during sterilization push bitter substances into the background and grassy, soft tones dominate.
