RAPADURA is produced using the original traditional method of thickening cane juice until the water is completely evaporated without removing the cane molasses. It has a pleasant caramel taste and is suitable for baking and cooking, for sweetening desserts, coffee and tea. It can be used instead of white sugar whenever we do not insist on a pure white color of the final dish. Sugar cane, used in the production of dried cane juice RAPADURA, is grown organically by family businesses involved in the FAIR TRADE project HAND IN HAND in Brazil in the same place since 1977. Sugar cane cultivation and cane sugar production here are carried out in a traditional way without the use of any synthetic fertilizers, herbicides and pesticides. To maintain the fertility of the land, farmers here use crop rotation, alternating sugarcane with legumes and soil-enriching plants. Combining a composting system with organic livestock farming improves nutrient flow, resulting in higher soil fertility and healthier plants. A major problem caused by strong tropical storms is soil erosion. This is prevented by planting parallel to the slope of the hills and incorporating shrubs, trees and other small habitats.

Sugarcane is harvested by hand with a machete. The leaves are cut from the stems and left in the field as fertilizer. Not only do farmers not use pesticides, but they also do not burn the fields before harvesting. This practice is common in conventional agriculture to facilitate harvesting, as only the stems are left standing in the field. Organic farming not only protects the natural microenvironment and nature, but also ensures the return of nutritious organic substances back into the nutrient cycle. The farmers transport the sugar cane to their own sugar mill, Planéta Verde, for processing. Here, the cane is pressed and the juice obtained is first filtered. It is then concentrated by evaporation in large boilers. At the end, stir until it starts to crystallize.
