This concentrated Tsuyu is rich in umami and spice. The combination of Shiitake mushroom, soy sauce and mirin creates a deliciously spicy flavor with a hint of sweetness. Add four parts water to one part Tsuyu. Serve hot or cold with cooked noodles. Perfect as a dip for tempura or as a base for oriental-style cooking.
