Whole-wheat spelt tagliatelle
To make the dough, whole-wheat spelt flour is continuously mixed with water and kneaded until the desired consistency is reached so that the dough can be pressed through the appropriate dies. During each stage of the drying process, care is taken to ensure that the moisture is not removed from the pasta too quickly, so that the shapes have a good surface structure. Depending on the shape, the drying temperatures range between 70 and 100 °C.
Naturata spelt pasta is excellent for pasta dishes and salads. Their delicate nutty flavor really goes well with tomato, bolognese and cream sauces.
