Oyster sauce is a delicate, dark brown sauce with a distinctive aroma used as a condiment. It is made from oyster extract cooked in a fermented soybean sauce and brine. This sauce is typical of Cantonese, Thai and Vietnamese cuisine. There is also a vegetarian version that uses mushrooms as a base.
