Kuzu is a powder made from the crushed root of a vine that grows mainly in southern Japan and China. It is also found in North America.
In Japan, kuzu has been known for its medicinal properties for over 1,000 years. It is considered the most suitable starch in macrobiotics, and is also used in traditional Chinese medicine, according to which it strengthens the nervous system.
Kuzu is used as a plant-based binder. In Japan, it is often used in soups, sauces and (hot) desserts. The good thing about kuzu is that it does not affect the taste of the dish. And unlike cornstarch, kuzu goes well with sour dishes. It is also gluten-free and vegan! White kuzu is washed and filtered, which makes the taste neutral and the binding power is slightly stronger than that of gray kuzu.

Usage: Use 10 g of kuzu per 250 ml of liquid. Dissolve in 2-3 tablespoons of cold water before use. For pudding, use 50 g of kuzu per 400 ml of liquid.
