Gluten-free Swabian soul baking mix
As the name of the pastry suggests, the origin of "soul" dates back to All Souls' Day. In the past, entertaining poor souls on All Souls' Day played a major role, and soul bread and wine were placed on graves as food for the deceased.
Crispy on the outside, soft and fluffy on the inside.
Ingredients: 4-grain wholemeal flour mixture* (rice*, corn*, millet*, buckwheat*), dried yeast*, psyllium husks*, sea salt
*from organic controlled farming
Preparation:Mix 500 g of baking mix with 520 ml of lukewarm water. Knead the dough and let it rest for two hours, knead it and let it rest for two hours again.
With wet hands, shape the dough into balls and place them on a baking sheet lined with baking paper.
Sprinkle with salt and cumin to taste.
Bake at 220 °C top / bottom heat for about 17 - 20 minutes.
