This finely ground baking soda is suitable for food use and no aluminum compounds were used in its production. We use it to leaven some doughs. In an acidic environment, it decomposes with the formation of gas, carbon dioxide, which is why baking soda makes the dough rise only when some acidic component is present in it. For example, honey, sour milk products, chocolate work as an acidic component. For example, honey gingerbread can be puffed with baking soda and the result is more satisfying than using baking powder. The dosage of baking soda is much lower than the dosage of baking powder, it is often stated in the recipe at the tip of the knife. For kneaded doughs, you can count on approx. 1 teaspoon of baking soda per 500 g of loose ingredients.
