Gorgonzola is made from unheated whole cow's milk. It is named after the town in Lombardy near Milan, where it is said to have originated in the twelfth century. Gorgonzola is a traditional soft cheese with a delicate blue mold that provides a typical delicate, spicy taste. It matures for about two months and, next to Roquefort, it is probably the most famous blue cheese.
