Mozzarella di Bufala Campana DOP
The family business that produces this mozzarella is located in the upper Casertano. The hilly area at the foot of the mountains, formerly a marshy area, offers good air and a healthy climate after reclamation, and thanks to the presence of plenty of water.
The peculiarity of the production of buffalo mozzarella is that the curds are coarsely chopped and the crumbly mass is scalded with almost boiling water. The steamed mass is now mixed and kneaded until it turns into an elastic dough. The dough now forms long strands from which equal-sized pieces are cut. Hence the name ="mozzatura" = cutting.
